Cinco De Mayo Food Recipes to Bring Out the Festive Cheer

Cinco de Mayo (5th May) signifies a day that holds a lot of importance in Mexico and is celebrated with good food, wine, music, and dance. Let's see some traditional recipes prepared on this day.
Cinco de Mayo is celebrated on 5th May and signifies the victory of Mexican Army over the French rule. This day is a regional holiday in Mexico and is celebrated with great enthusiasm, which involves cooking some wonderful Mexican food, followed by parades with music and dance. Some traditional dishes that are prepared on this day are as follows:
Tomato Sauce, 8oz.
Mild Green Chilies, 4 oz. (chopped)
Fresh Tomatoes, 6 (chopped into ¼ inch pieces)
Green Onions, 3 (thinly sliced)
Red Onion, 1 (chopped)
Serrano Chile (Jalapeño), 1 (seeds removed and finely chopped)
Fresh Cilantro, ⅛ cup (finely chopped)
Red Wine Vinegar, 2 tbsp.
Chili Powder, ½ tsp.
Oregano, ½ tsp. (crushed)
Garlic Powder, ¼ tsp.
Cumin Powder, ¼ tsp.
Salt and Pepper, to taste
Preparation Combine red onions, green onions, Serrano chile, cumin, oregano, chili powder, garlic powder, green chilies, cilantro, tomato sauce, and red wine vinegar. Add some amount of salt and pepper.
Let these ingredients rest in a bowl overnight. This will let the flavors blend well. Serve it with tortilla chips. This salsa can be stored in the refrigerator for a few weeks.
Stuffed Mexican Tomatoes
Yellow Vine-ripe Tomatoes, 5
Pimentos, 2 (drained and chopped)
Jalapeño Pepper, 1 (seeded and finely chopped)
Lemon Juice, ½ lemon
Small Zucchini, ½ (diced)
Red Onion, ¼ (chopped)
Dried Breadcrumbs, 2 tbsp.
Fresh Cilantro, 2 tbsp. (chopped)
Extra-virgin Olive Oil, 2 tbsp.
Dried Oregano, ½ tsp. (crushed)
Salt and Pepper, to taste
Preparation With a knife, cut off the top portions of the 4 tomatoes and trim the bottom to flatten the base so that they can be kept upright. Use a spoon to scoop out the inside of the tomato. Then, use some salt and pepper as seasoning. Next, you need to remove the stem of the remaining tomato. Once done, seed and chop the tomato.
Meanwhile, take a bowl and combine jalapeño, chopped tomato, onions, pimentos, lemon juice, oregano, cilantro, and zucchini. Then, sprinkle some breadcrumbs over these ingredients in the bowl.
You can now add some virgin olive oil. Remember to pour the oil slowly. Add some salt and pepper to enhance the flavor. Use these ingredients as a filling for the tomatoes shells.
Cream and Cheese Flan
Cream Cheese, 1 pack (cut and softened)
Evaporated Milk, 1 can
Sugar, 2 cups
Vanilla, 1 tsp.
Salt, to taste
Preparation Preheat the oven to 350° F. Then, place around 1 cup of sugar in a small-sized saucepan. Cook it on medium heat, till the sugar turns a shade of golden brown. Use a wooden spoon to stir the same. You would need to tilt the pan so that its bottom gets covered evenly with sugar.
Then, combine milk and cheese in a blender, and blend till it attains a smooth texture. Now, add the remaining amount of sugar with vanilla and eggs. Add some salt. Next, blend these ingredients until they turn smooth. Pour the same into a pan, which contains the sugar syrup.
Now, place this pan into a larger sized baking pan. Add some hot water to the larger pan. Bake this for around 50 minutes. Once done, let it cool down. Then, remove the flan from the water and let it cool further on the rack. Refrigerate to chill it completely. Serve it chilled.
